Pear Collins

Ingredients:

  • 2 oz Gin
  • 2 oz Pear
  • 1 tbsp Lemon Juice
  • 1 tbsp Honey
  • Club Soda
  • Thyme

Directions:

Pureed Pear: Peel and core a ripe pear.  Puree in a food processor or blender until smooth.

Place gin and pear puree in a shaker with ice cubes and shake. Strain into a highball glass with ice. Top with soda and garnish with thyme.

Directions:

Shake first four ingredients together strain into glass, top with club soda, garnish with a pear slice.

*Ginger Lime Syrup:
Ingredients:
1 Cups Granulated Sugar
1 Cups Water
0.75 Cups Sliced Ginger
1 (2-inch) Lime Zest Strips
0.25 Cup Lime Juice
Directions:
1. Bring all the ingredients to a boil in a saucepan over medium heat.
2. Lower the heat and let simmer for 1 hour. Stir occasionally.
3. Cool, strain the solids, refrigerate and store for up to 30 days.
