Tequila Chicken Carnitas

Ingredients:

  • 1/2 cup Blanco Tequila
  • 8 boneless chicken thighs
  • 1 small red onion, diced
  • 1 orange, juiced
  • 1 lime, juiced
  • 1/2 cup chopped cilantro
  • 1 tsp oregano or Mexican oregano
  • 1 tsp cayenne pepper
  • 1 tsp chili powder
  • 1 tsp cumin powder
  • 1/4 tsp kosher salt, more to taste

Directions:

Serves 4-6 people. Prep time 15 mins. Cook time 4-6 hrs.

  1. Add all ingredients to a crockpot.
  2. Cook on low heat for 4-6 hours.
  3. Once chicken is done, separate all the chicken pieces, and shred.
  4. Transfer the juices/sauce to a saucepan and heat on medium-high.
  5. Simmer and reduce for 10-15 minutes, until liquid is reduced by half.
  6. Add chicken again and stir.
  7. Serve with your favorite taco fixings and a margarita to complete the dish!
