Tequila Chicken Carnitas
Ingredients:
- 1/2 cup Blanco Tequila
- 8 boneless chicken thighs
- 1 small red onion, diced
- 1 orange, juiced
- 1 lime, juiced
- 1/2 cup chopped cilantro
- 1 tsp oregano or Mexican oregano
- 1 tsp cayenne pepper
- 1 tsp chili powder
- 1 tsp cumin powder
- 1/4 tsp kosher salt, more to taste
Directions:
Serves 4-6 people. Prep time 15 mins. Cook time 4-6 hrs.
- Add all ingredients to a crockpot.
- Cook on low heat for 4-6 hours.
- Once chicken is done, separate all the chicken pieces, and shred.
- Transfer the juices/sauce to a saucepan and heat on medium-high.
- Simmer and reduce for 10-15 minutes, until liquid is reduced by half.
- Add chicken again and stir.
- Serve with your favorite taco fixings and a margarita to complete the dish!
