Rum Raisin Baked Apples

Serves 2, 5 minutes

2 Apples (Cortland or Macintosh), peeled and cored but left whole
½ c. Golden Raisins
1 tbs. Maple Syrup
1 tsp. Unsalted Butter
¼ c. Rum
Vanilla Bean Ice cream
Salt

- Combine the raisins, rum, butter, and maple syrup in a small bowl. 

- Place whole apples in a microwave-safe bowl. Then top with rum raisin mixture and microwave for 3 minutes 30 seconds.

- Remove from microwave and sprinkle with a hint of salt. Top with your favorite ice cream or gelato and enjoy!
