Oleo Saccharum (Non-Alcoholic Mixer)

- 4 Lemon
- 3/4 Cup Sugar

1. Take 4 fresh lemons (you may want to leave them at room temperature for a while before you start), and use a vegetable peeler to remove the peels of the lemons. Be careful not to peel too deeply, instead cut peels as paper-thin as possible, leaving most of the layer of white pith behind on the lemon.
2. Put the peels in a bowl, cover them with sugar, and muddle them together.
3. Cover the bowl and leave it someplace warm for several hours (at least 3) to a day, periodically muddling the ingredients.
4. The sugar should extract the oils from the lemons, and turn into a yellow slush. Add 1/4 cup boiling water.
5. Strain and funnel into a bottle. Will last several weeks.
