Infinity Pool
Ingredients:
- 1 1/3 cups Mezcal
- 1 1/3 cups Lillet Blanc
- 2/3 cup Simple Syrup
- 2 1/4 teaspoons Bitters
- 3/4 cup Water
- 1 1/3 cups Celery Juice
- 1 cup Lemon Juice
- Salt
Directions:
Makes about 10 cocktails in a 2 quart pitcher
Pour mezcal, Lillet blanc, simple syrup, bitters, and water into a 2-quart pitcher and stir to mix. Seal well, covering with plastic wrap if needed, and refrigerate for at least 2 hours (or overnight).
Before serving, prepare fresh celery and lemon juices and stir into the pitcher mixture.
To serve, place a large ice cube in each rocks glass, then pour in cocktail and garnish with a small pinch of salt and a lemon wheel.
