Rhubarb Pie Cocktail

Ingredients:

  • 8 oz Vodka
  • 5 stalks Rhubarb
  • 1/4 cup Water
  • 1/4 cup Sugar
  • Club Soda

Directions:

Makes 4 Cocktails 

Instructions for the Rhubarb puree: Place the rhubarb, water and sugar in a medium saucepan over medium heat. Stir periodically for 5-10 minutes until the rhubarb has broken down into a puree. Place a strainer or sieve over a bowl and pour rhubarb mixture into the strainer. With a spatula or pliable spoon, push the rhubarb through the strainer to release the juice. Allow strained juice to cool. NOTE: pulp is not used in the recipe 

Instructions to make the Cocktail:Mix 1 ounce rhubarb puree with 2 ounces Vodka in a shaker with ice. Shake, strain over fresh ice in a lowball glass. Fill with club soda.

Rhubarb Gin Rickey

Ingredients:

  • 2 oz Gin
  • 2 oz Lime Juice
  • 2 oz Rhubarb Simple Syrup
  • 3 Strawberries
  • 2 oz Club Soda

Directions:

MAKE THE RHUBARB SYRUP:

1/2 pound rhubarb, chopped
1/2 cup granulated sugar
1 1/4 cups water

Combine ingredients in a saucepan and simmer until liquid has turned pink and rhubarb has softened. Strain into a jar and chill before using as a mixer.

MIX THE COCKTAIL:

To make the cocktail, combine chilled rhubarb syrup, strawberries, lime juice and gin in a glass with crushed ice and stir. Top with sparkling water and garnish with sliced lime wheels, strawberries and thinly shaved rhubarb for garnish if you're feeling fancy.

Strawberry Mint Refresher

Ingredients:

  • 2 oz Vodka
  • 2 oz Tonic Water
  • .5 oz Simple Syrup
  • 3-4 Strawberries

Directions:

Mix vodka and simple syrup in a shaker. Strain into glass with muddled ice and muddled strawberries. Top with lime tonic and mint. Enjoy!

Bourbon Strawberry Iced Tea

Ingredients:

Directions:

1. Add the strawberries and lemon juice into a shaker and gently muddle.
2. Add the bourbon and simple syrup, add ice, and shake until well-chilled.
3. Strain into a Collins glass over fresh ice.
4. Top with unsweetened iced tea.
5. Garnish with a mint sprig and skewered blueberries and strawberries.
