Appalachian Gap procured grade B syrup from Breezy Lane Sugarworks in Bristol for their Creemee Maple cream liqueur.

Instead of using a conventional chocolate flavoring, the App Gap crew infuses its whiskey with cocoa nibs. They use vanilla paste instead of vanilla extract.

Production: Appalachina Gap Distillery starts with a mash of local barley, corn, and rye. Double distilled, it is then aged in new American oak barrels and finished in port wine barrels to create a truly special whiskey.

Nose: Cedar, mint, dried fruit, with notes of vanilla.

Production: Appalachian Gap Distillery starts with a mash of 100% rye — no barley, no other grains — which is a little extra work but results in stronger, more vibrant flavor. Double distilled, it is then aged in new American oak barrels for at least three years. They make just a dozen barrels a year.

Nose: Citrus, raisins, caramel, spice, a hint of vanilla.

As is the case as regards all of their crèmes de cassis, for this Dijon Crème de Cassis 20% Briottet use the most prestigious blackcurrant variety. Indeed, “Noir de Bourgogne” variety (meaning Black of Burgundy). Their berries are harvested exclusively in Burgundy in France. The blackcurrant berries are macerated in a water and alcohol solution for about 10 weeks.

Bergamot is the fruit of the bergamot tree which is mainly grown in Italy. Bergamot oranges are the result of crossing a bitter orange variety with a lime variety. Its flesh is slightly acidic and bitter.

The grapefruit or pomelo rose originates in the Antilles archipelago in the Caribbean. It grows in bunches, which is where its name in English comes from (grape means cluster). This Pink Grapefruit Liqueur perfectly expresses the grapefruit’s acidulous side. It is refreshing in the mouth and and it perfectly brings out the pink grapefruit’s flavours — softness and bitterness.
